  1. In a pan, at low heat, melt the peanut butter with coconut oil. Add Stevia.
  2. Pour the fudge in a muffin tin and freeze for 2 hours at least.
  3. Top with melted chocolate, slice, and serve.

    • Hi, Neen1009. You can use any nut or seed butter for this recipe – almond butter may be particularly good here. In general, you can swap items in your menu by clicking on the edit or crossout tool to the right of it, then selecting a replacement from the pop-up list.

    • Hi, Aidz. You melt the dark chocolate in a microwave or over the stove until it is in a pourable state, then pour it over the layer of peanut butter+coconut oil. You melt the latter together until they can be well-blended and poured or spread into a pan or muffin cups.

    • Hi, NewKali. You can remove items from your menu that contain ingredients to which you are allergic by clicking on the cross-out icon and selecting a replacement from the pop-up menu. You can also often substitute items. For example, if you are allergic to peanuts, you can make this recipe with any other nut butter (almond is easiest). If you have many allergies, please repost here, and I will give you instructions for personalizing your menu.

        • Hi, Supermom0504. There is also the option for personalizing the menu altogether. To take advantage of this, just do the following:
          1. Deselect “keto” from the “Dietary Needs” section of your profile (lower right area).
          2. Generate a new menu
          3. Click on the edit tool (pencil icon) at the upper right of each meal header, then make food choices to match the pattern offered, with the following substitutions to make it keto:
          * 2 fat exchanges for each carbohydrate exchange
          * a vegetable exchange for each fruit exchange (or low-carbohydrate fruits like cantaloupe and raspberries)
          * for the sweet exchange, use a high-fat, low-carbohydrate choice like dark chocolate
          4. If you prefer fewer snacks/meals as in the original keto plan, use the exchanges from meals you don’t want in the meals you do want.
          * Since the system does not allow blank meals, just select a placesaver like “Vegetables of Your Choice”

  1. I made this with a little adjustment. I used unsweetened raw cocoa powder instead of chocolate. I melted the peanut butter + coconut oil, mixed in the raw cocoa + stevia and freeze. It gave a light chocolate color and it tastes good with a little bitterness to it.

  2. I used natural peanut butter, TLC oil and Stevia. I heated on low until melted then added the Stevia, put it in a pan instead of cupcake pan, stuck it in the freezer and left it for 3 hours. Took it out to put the chocolate on top and was so surprised to turn around and find it in a liquid form exactly like it was 3 hours prior. This was a total waste of food.

You definitely don’t need to be rich to go keto, just know where to shop for affordable healthy staples – bigbox discount stores like Target, CostCo, WalMart have an increasingly good selection.

  3. The amount of chocolate in the photo is not correct for the photo. I heated one ounce of chocolate and it only covered six (of 12 pieces) very thinly. Suggest modifying recipe and macros to double the chocolate, or please advise how to stretch chocolate to cover all 12. Thanks.
