Ingredients
- 1 lbs. / 454 g ground lean ground game meat, beef, or poultry (if beef or poultry, preferably organic pastured)
- 2 tsp. / 9 ml olive oil
- 1 medium onion, thinly slices
- 1 garlic clove, minced
- 1½ cups / 140 g (¼-inch / 0.5 cm thick) slices red and yellow bell pepper, each slice cut in half
- 1 medium carrot, finely chopped
- ¼ cup / 35 g golden raisins
- ¼ cup / 60 ml dry white wine
- 10 green olives, sliced
- 1 Tbsp. / 15 ml balsamic vinegar
- Salt or salt substitute to taste
- ⅛ tsp. / ⅓ g ground black pepper
- 1 bay leaf
- 1 cup / 255 g stewed tomatoes and liquid, preferably no-salt-added
- ½ cup / 122 g tomato sauce, preferably organic no-salt-added
Directions
- Cook beef in a large non-stick skillet over medium-high heat until browned; stir to crumble. Remove from pan; drain well.
- Add oil to pan. Add onion and garlic; sauté 3 minutes. Add bell peppers and carrot; sauté 3 minutes.
- Return beef to pan. Stir in raisins and remaining ingredients; bring to a boil. Reduce heat; simmer for 15 minutes, stirring occasionally. Discard bay leaves.
- Remove from heat and serve or freeze to be re-heated later.
- Serve over brown rice or freekah (⅓ cup / 100 gm = 1 carb exchange).
Grated Asiago or Parmesan cheese may be added (½ oz / 15 g = 1 protein exchange).

Cooked this, very delicious and cooked 8 serving version. The servings are so small it is a joke. I used this for a dinner main meal. Not adequate for dinner. Very confused
I just had this dish and I love it.
I make this type of dish, with similar ingredients, adding a little water and letting everything cook together at the same time in a big pan with a good solid lid and I let it stew. I sometimes substitute with ground turkey from Costco & organic coconut oil. I use a condiment used in Latin cuisine a green olive, caper, & red pepper mix. This condiment, alcaparra, is readily available in Puerto Rico, and can be found in the U.S under the GOYA brand.
hi my wife made this dish us for dinner and we loved it. she made her own sauce and it was so good. and it set the rice just rite.
My family and I LOVED it! Oh, and I also made my own tomato sauce to cut the processed food part out of the recipe. To cut the sodium content down I used half the amount of white wine and added a little bit more tomato sauce. We ate it over quinoa instead of rice as suggested. Super easy and quick meal.
If you have GERD (gastroesophageal reflux disorder) stay clear from this hot tomato based dish. It tastes great but I am paying for it with much pain!!! it was only a cup I ate.
