Ingredients

  1. 2c whole grain gluten free flour mix
  2. 1c coconut palm sugar or brown Just Like Sugar
  3. 2 tsp baking powder, aluminum-free
  4. 1-1/2 tsp baking soda
  5. 3 tsp cinnamon
  6. 1/2 tsp freshly ground nutmeg
  7. 1 tsp ground ginger
  8. 1/2 tsp ground cloves
  9. 3 eggs, organic pastured
  10. 1/2c coconut fat, melted
  11. 2 cups / 15 oz pumpkin puree
  12. 1c 2% organic pastured dairy or light coconut milk
  13. 1/2 tsp kosher salt
  14. 2T flax seeds

Directions

  1. Mix all ingredients. Pour into a loaf pan coated with non-stick cooking spray.
  2. Bake at 350°F for 40-45 minutes.
