An easy quinoa and chickpea salad.

Ingredients
- 1 ½ cups Water
- ¾ cup Quinoa
- 2 tbsp Extra Virgin Olive Oil
- ½ cup Chopped Onion
- ½ cup Chopped Bell Pepper
- 1 15 oz Can Chickpeas, drained
- 2 tbsp Lemon Juice
- ½ tsp Chilli Powder
- ½ tsp Fresh Oregano
- 1 tsp Fresh Parsley
- ½ tsp Sea Salt
Directions
- 1. Bring water to a boil. Add quinoa and stir.
- Turn heat down to low. Cover and simmer 25-30 minutes until all water is absorbed. Cool.
- Drain and rinse chickpeas.
- Heat 1 tablespoon oil in medium skillet. Saute` onion and pepper over medium heat for 2-5 minutes or until onions are slightly soft
- In a large bowl mix thoroughly onion-pepper mixture, cooked quinoa and chickpeas.
- In a small bowl add lemon juice, chili powder, oregano, parsley and salt. Slowly whisk in remaining oil. Pour over quinoa-chickpea mixture. Gently mix until dressing thoroughly covers all the salad.
