Ingredients

  1. 1 ½ cups Water
  2. ¾ cup Quinoa
  3. 2 tbsp Extra Virgin Olive Oil
  4. ½ cup Chopped Onion
  5. ½ cup Chopped Bell Pepper
  6. 1 15 oz Can Chickpeas, drained
  7. 2 tbsp Lemon Juice
  8. ½ tsp Chilli Powder
  9. ½ tsp Fresh Oregano
  10. 1 tsp Fresh Parsley
  11. ½ tsp Sea Salt

Directions

  1. 1. Bring water to a boil. Add quinoa and stir.
  2. Turn heat down to low. Cover and simmer 25-30 minutes until all water is absorbed. Cool.
  3. Drain and rinse chickpeas.
  4. Heat 1 tablespoon oil in medium skillet. Saute` onion and pepper over medium heat for 2-5 minutes or until onions are slightly soft
  5. In a large bowl mix thoroughly onion-pepper mixture, cooked quinoa and chickpeas.
  6. In a small bowl add lemon juice, chili powder, oregano, parsley and salt. Slowly whisk in remaining oil. Pour over quinoa-chickpea mixture. Gently mix until dressing thoroughly covers all the salad.
