Ingredients
- 1½ cups / 360 ml hot water
- 8 cups / 2 L water
- 1 tsp. / 6 g salt
- 4 large sweet yellow bell peppers
- 1 cup / 150 g cherry tomatoes
- 5 cups / 1200 ml vegetable broth
- 1 cup / 170 g quinoa
- 1 Tbsp. / 15 ml lemon juice
- 3 Tbsp. / 45 ml olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 1 cup / 120 g cucumber, diced
- ½ cup / 8 g fresh cilantro
- 4 Tbsp. / 20 g dried wakame seaweed
- Salt and pepper to taste
Directions
- Rehydrate the wakame seaweed in the hot water. Slice the peppers in half; remove the membranes and seeds.
- In a stock pot, bring regular water to a boil over high heat; add the sweet peppers and cherry tomatoes along with the salt or substitute; reduce the heat and simmer for 3 minutes.
- Transfer the bell peppers onto paper towels to drain. Slice the tomatoes in halves.
- Over high heat, bring the vegetable broth to boil in a saucepan. Stir in the quinoa, reduce the heat, and simmer for about 20 minutes, occasionally stirring. Remove from heat and aside to cool.
- Combine the olive oil, lemon juice, and garlic in a small bowl. In a separate bowl, mix the cooled quinoa with the onion, cilantro, wakame, cucumber, and cherry tomatoes.
- If desired, season with salt and pepper. Add the olive oil dressing, and toss well to combine. Portion this mixture into each yellow pepper half and serve.

with what can I substitute seaweed?
I m vegetarian
Hi, Ellie66. Any green leafy vegetable will do.
Wakeman Seaweed, can’t find in my area. What could I use instead?
Hi, Sandy. Any green leafy vegetable or herb (like parsley) will do.
Hi, Joyce. Quinoa is a “pseudograin,” or seed that is cooked and eaten like a grain. It is one of the “ancient” grains that are touted for their relatively high nutritional density. You can read more about it here: http://www.trimdownclub.com/supergrains-quinoa-and-buckwheat-groats/.
I’m sorry but what is quinoa.
I just love this recipe. I will make tonite for supper
How is this a vegan meal if it contains chicken broth? What is quino wakame?
Where is capsicum in the recipe and what is it?
Hi, EloiseT. Cilantro is also known as “coriander” it looks similar to Italian parsley, but with a distinctive scent ad flavor.
I am going to make a version of this recipe without the seaweed and adding mince. I think I will also roast the capsicums halves in the oven and then fill them.
What is Cilantro?
Thanks good to know.
For anyone who does not know: capsicums is a genus for many types of peppers such as chili or bell peppers. Not sure why this recipe would start with the term yellow pepper and then switch to capsicums in the directions.
