Ingredients
- 1¼ cups light spelt flour
- 1½ tsp baking powder
- ½ tsp baking soda
- 1 cup spelt bran
- ½ cup ground flax
- 1¼ cups 1% or skim milk
- ¼ cup olive oil
- ⅓ cup blackstrap molasses
- 1 egg
- 1-1½ cup raisins
Directions
- Combine flour, spelt bran, ground flax, baking powder, soda. Add milk, oil, molasses, egg and stir until combined. Add raisins.
- Pour batter into paper-lined (I use parchment muffin liners or unbleached totally chlorine-free muffin liners) muffin tins.
- Bake at 375 to 400 degrees for 20 – 22 minutes. Do not over bake.
I use spelt, because we can not use wheat flour because of allergies. Have always been told for nutrition wise to use blackstrap molasses. Recipe calls for 1 1/2 cups of wheat bran. I use spelt bran and ground flax and 1 cup of one and 1/2 of the other. I would like to know if these muffins we love is a good thing to have or not? As one of the snacks or breakfast — half of one or proteins with it? Thank you.
