Ingredients

  1. 1¼ cups light spelt flour
  2. 1½ tsp baking powder
  3. ½ tsp baking soda
  4. 1 cup spelt bran
  5. ½ cup ground flax
  6. 1¼ cups 1% or skim milk
  7. ¼ cup olive oil
  8. ⅓ cup blackstrap molasses
  9. 1 egg
  10. 1-1½ cup raisins

Directions

  1. Combine flour, spelt bran, ground flax, baking powder, soda. Add milk, oil, molasses, egg and stir until combined. Add raisins.
  2. Pour batter into paper-lined (I use parchment muffin liners or unbleached totally chlorine-free muffin liners) muffin tins.
  3. Bake at 375 to 400 degrees for 20 – 22 minutes. Do not over bake.

I use spelt, because we can not use wheat flour because of allergies. Have always been told for nutrition wise to use blackstrap molasses. Recipe calls for 1 1/2 cups of wheat bran. I use spelt bran and ground flax and 1 cup of one and 1/2 of the other. I would like to know if these muffins we love is a good thing to have or not? As one of the snacks or breakfast — half of one or proteins with it? Thank you.
