      Ingredients

      1. 1 large red Capsicum
      2. 2 Zucchinis
      3. 2 Onions
      4. 1 large Sweet Potato
      5. 2 Potatoes
      6. 3 cups Mushrooms
      7. 1 small packet Vegetable or Chicken Stock
      8. 1 cup of water
      9. 1 pkt French Onion Soup powder
      10. 1 large pinch of Herbamare herbs
      11. 1 clove Garlic

      Directions

      1. Cover a large baking tray with Olive Oil, cut all the vegetables (except the Mushrooms) in to cubes and roll in Olive Oil in tray. Sprinkle the Herbamare over the vegetables.
      2. Turn oven onto 180 and roast slowly for about 30 mins, keeping an eye on the vegetables.
      3. In a large pan bring to the boil the water, French Onion Soup mix and Stock. Add vegetables from oven tray once roasted.
      4. Lastly, add the Garlic and Mushrooms.
      5. Cook for about 15mins. Then place soup through a food processor a bit at a time, discarding any pulp.

      Serve hot with crusty bread and butter.
