Ingredients
- 1 large yam or sweet potato, quartered and sliced to ½-inch thick pieces
- 1 small green and red bell pepper, roughly chopped
- 1 large onion, sliced into thick rings
- 1 Tbsp. olive oil
- 1 tsp Italian spice blend
- Salt and pepper to taste
- 2 Tbsp cheese, grated
- 2 Tbsp whole grain bread crumbs
Directions
- Preheat oven to 325°F.
- Sauté yams and onion over medium heat until slightly browned. Add peppers and cook a few minutes more. Sprinkle on spices (and salt and pepper, if desired).
- Put mixture into casserole dish and sprinkle with cheese and crumbs, then spray with cooking spray (makes topping crunchy!).
- Bake for 30 minutes, until yam is soft.
Serves 6 generously as a side dish.
You can use almost any vegetables. I used whole wheat crumbs..hubby loved it!
