Ingredients

  1. 1 large yam or sweet potato, quartered and sliced to ½-inch thick pieces
  2. 1 small green and red bell pepper, roughly chopped
  3. 1 large onion, sliced into thick rings
  4. 1 Tbsp. olive oil
  5. 1 tsp Italian spice blend
  6. Salt and pepper to taste
  7. 2 Tbsp cheese, grated
  8. 2 Tbsp whole grain bread crumbs

Directions

  1. Preheat oven to 325°F.
  2. Sauté yams and onion over medium heat until slightly browned. Add peppers and cook a few minutes more. Sprinkle on spices (and salt and pepper, if desired).
  3. Put mixture into casserole dish and sprinkle with cheese and crumbs, then spray with cooking spray (makes topping crunchy!).
  4. Bake for 30 minutes, until yam is soft.

Serves 6 generously as a side dish.
You can use almost any vegetables. I used whole wheat crumbs..hubby loved it!
