Ingredients

  1. 2 yukon gold potatoes, cut into bite-sized chunks
  2. 2 white onions, cut into bite-sized chunks
  3. 2 Tbsp coconut oil
  4. 1 tsp pepper
  5. Salt or substitute to taste

Directions

  1. Toss all ingredients in a large bowl and throw out onto a cookie sheet with sides.
  2. Roast for 30 minutes at 500 °F.
  3. This is sooo versatile. You can add squash, zucchini, butternut squash, pumpkin seeds, flax seeds.

It just all depends on what you like. Asparagus is great this way. For another variation sprinkle with parmesan cheese
