Ingredients

  1. 1 lb. / 450 g fish fillets
  2. 2 chopped onions
  3. ½ cup / 8 g fresh cilantro/coriander
  4. 3 cloves fresh garlic, chopped
  5. 1 tsp cumin seeds
  6. 1 Tbsp / 7 g ground black pepper
  7. 1 Tbsp / 14 g ginger paste
  8. Salt to taste
  9. 4 Tbsp / 60 ml grapefruit juice
  10. 6 medium tomatoes
  11. ½ cup / 120 ml water

Directions

  1. Mix grape fruit juice and ginger paste. Coat fish with the mixture and marinate fish foe 10 minutes.
  2. Wrap fish with foil paper and bake for 10 minutes at 170°F / 75°C. Remove fish and set aside.
  3. In a pan add tomatoes, onion, cilantro/coriander leaves, ground black pepper, salt, garlic cloves and half cup of water. Let it cook for 5 minutes.
  4. Blend them together with the help of hand blender.
  5. Place fish fillet in serving platter and pour the blended sauce onto it.
  6. Garnish with coriander leaves and serve with brown rice.
