Ingredients

  1. ¾ cup / 105 g spelt flour
  2. 1 egg, preferably organic omega-3 or pastured
    • or 3 Tbsp. / 45 ml water + 1 Tbsp. / 6½ g freshly-ground flaxmeal
  3. 1 tsp baking powder (preferably aluminum-free)
  4. ⅛ tsp / ½ ml salt
  5. ¼ cup / 60 ml organic grass-fed or vegan milk
  6. ¼ cup / 60 ml water
  7. 1 tsp / 5 ml olive oil

Directions

  1. While preheating your waffle iron, mix all the dry ingredients on a bowl. Then whisk together the oil, milk, and ¼ cup / 60 ml water until mixture is smooth. If you are using a flax meal egg substitute, combine with the 3 Tbsp. / 45 ml water and let sit for 10 minutes to gel (5 minutes if the water is warm).
  2. Add the egg or flaxmeal gel to the oil-milk-water combination, and whisk together until well combined.
  3. Scoop the batter onto the waffle iron and close it. Cook for about 2-5 minutes or until the sides of the waffles turn golden brown.
  4. Remove the waffles and set them aside on a plate or cooling rack. Repeat the procedure for the remaining batter.
Top with dairy or butter before serving, if desired (½ tsp / 2½ ml = ½ fat). You may also add some fresh fruit (½ cup / 120 ml = ½ fruit serving). Serving Size: 1 waffle Exchanges per Serving: 1 Carb, ½ Protein

  1. Hi, DottiV. Spelt is an older, less processed form of wheat that is easier on the system, including for some people who are sensitive to wheat. You can find it in health-oriented shops, some warehouse-type supermarket chains, and online. If you are not sensitive to wheat, you can just use regular whole wheat flour.

  2. Thanks, Ossie. Just found this. By the way, I can’t find spelt waffles on the new menu planner. I have looked under breakfast foods, sweets & desserts, grains, and breads. Has it been left off on purpose? Not sure exactly how to plug it in to my breakfast. Would like to have some strawberries for my fruit (cooked a bit w/ stevia for “syrup”) and a bit of nut butter. But not sure if that would be too much fat. That’s the part I have trouble with … the fats and substituting things. Also the amt since the recipes usually have “1-2 servings”. I need a specific amt … weight, or measured, or something. Hence, my hesitance to exchange on my own! Thanks, Ossie.

  3. Hi, BlessingCatcher. To use gluten-free flour, it needs to be a mix. The most reliable thing is to get a good brand, such as Bob’s Redmill – that blend contains some whole grains. If you want to do the mix yourself with brown rice flour, the following swap for the spelt flour would be recommended:
    6 Tablespoons brown rice flour
    3 Tablespoons gluten-free oat flour
    3 Tablespoons sorghum flour
    or
    6 Tablespoons brown rice flour
    3 Tablespoons almond flour
    2 Tablespoons potato starch (not flour)
    1 Tablespoon tapioca flour
    You can also mix buckwheat flour with brown rice flour – mostly buckwheat, but with enough rice flour to soften the distinctive taste of the buckwheat.

  4. Sharon, will brown rice flour, substituted for the spelt flour give the same results? Do I need to add anything else or make other changes to use it? My daughter is wheat/gluten intolerant and she tries to steer clear of spelt as well, as she has understood it is a “cousin” of the wheat. What do you think?

  5. Hi, melromig. Weis Markets do indeed carry those products, as do health-conscious chains such as Whole Foods Markets and Trader Joe’s. Many of these lesser known ingredients are healthier and better for metabolism in part because they are less mass-produced and modified. It reall is worth trying them and seeing if any can become part of your regular fare.

  6. I am very new to this program, but I love to cook. I just don’t know where to get some of the ingredients — like Spelt Flour (I don’t even know what this is), Omega-3 or grass-fed eggs, organic grass-fed of vegan milk. There aren’t a lot of different stores around the area, and I usually shop at one store, Weis Market. Would they have these kinds of food? I never really looked before, I just got what I needed.
