Ingredients
- 1 large head cauliflower, split into florets
- ½ medium head green cabbage, shredded
- 200 g / 7 oz. potatoes, cubed
- 400 g / 14 oz. tomatoes, chopped
- 2 raw garlic cloves, crushed
- 1 medium onion, chopped
- 1 tsp. / 3 g turmeric powder
- ½ tsp. / 1 g cayenne pepper powder
- ½ tsp. / ⅞ g cumin seed powder
- ½ tsp. / 1 g coriander seed powder
- ½ tsp. / 1 g paprika powder
- ½ tsp. / ⅞ g garam masala powder (Punjabi style)
- ½ tsp. / 2½ g raw sugar
- 2 Tbsp. / 30 ml tomato paste, no salt added
- 60 ml / ¼ cup low sodium vegetable stock / broth
- 2 Tbsp. / 2 g coriander / cilantro leaves, chopped
Directions
- Place all the ingredients in the slow cooker, except the chopped coriander.
- Combine well, cover and leave to cook on high for 3-5 hours or until the vegetables are tender and cooked through.
- Sprinkle with chopped coriander and serve.
