Skinny Slow Cooker Thai Basil Curry.

Ingredients
- 1 lb Lean pork tenderloin, organic/pastured, cubed
- 2 onions, finely chopped
- 2 tbsp. Thai red curry paste
- 2 tsp tamarind paste
- ½ tsp ground coriander/cilantro
- 1 red pepper, sliced
- 2 carrots, julienned
- 1 lemongrass stalk, finely chopped
- 3 tbsp. fresh basil, chopped
- 500 ml /2 cups low-sodium chicken broth
Directions
- Season the pork and quickly brown for a couple of minutes in a frying pan with a little olive oil spray.
- Remove from the heat and place in the slow cooker along with all the other ingredients.
- Combine well, cover and leave to cook on low for 5-7 hours or until the pork is tender and cooked through.
