Ingredients

  1. 1 lb. / 450 gm salmon fillet, quartered
  2. 2 tsp. / 10 ml olive oil
  3. Salt and pepper to taste
  4. Your favorite seasonings (i.e., dill, garlic, lemon zest, thyme)
  5. 1 tsp. / 5 ml chili sauce

Directions

  1. Preheat your oven to 250°F / 120°C*. Use 1 teaspoon / 5 ml olive oil to brush or mist a baking dish large enough to hold the fish pieces in a single layer.
  2. Lightly coat the salmon meat with remaining olive oil, chili sauce, pepper, and other seasonings.
  3. Place salmon in the prepared baking dish and roast for about 30 minutes.
  4. Cut salmon to serving-sized pieces.

* Can also be placed in a slow-cooker, and cooked on low for 2-3 hours, depending on degree of “doneness” desired.

** Serve with rice (½ cup / 100 gm cooked = 1 carb serving) and a salad of greens (1 cup greens / 240 gm = 1 carb serving; 1 Tbsp. dressing / 15 ml = 1 fat serving).

  1. Hi, June. Monk fruit is a natural sweetener found in health-oriented shops and even online in powder and syrup (liquid) form. However, it has a bit of an aftertaste and so might not be to your liking. I suggest you try something like inulin (http://www.justlikesugar.com) or xylitol, which is used in sugarless gum (also found in health-oriented shops and available online, including through Amazon: http://www.amazon.com/s/ref=nb_sb_noss_1?url=search-alias%3Daps&field-keywords=xylitol&rh=i%3Aaps%2Ck%3Axylitol).

  2. Is there a mistake in the number of servings? If it makes five servings, why do we cut the filet into quarters initially? Or is each quarter cut into five servings? This could make a huge difference in how much is being consumed in each serving, and one twentieth of a pound of salmon isn’t very much food!

  3. Stevia is a natural sweetener, available in health-oriented stores and online. Stevia syrup is another term for liquid Stevia. You can use powder in place of liquid, keeping in mind that each 30 drops of the syrup is equal to a teaspoon of the powder.
