Ingredients

  1. ¼ small red onion
  2. 2 Tbsp white vinegar
  3. 1 bay leaf
  4. 2 peppercorns
  5. ⅛ tsp of kosher salt
  6. ⅛ tsp dried chili flakes
  7. ¼ pound thinly-sliced smoked turkey (preferably lean, all-natural/organic)
  8. 2 1-oz slices of pepper jack cheese (preferably grass-fed)
  9. 1 medium tomato, sliced
  10. Pickled onions
  11. 4 slices of SWG* or 100% whole grain sourdough bread

* SWG = sprouted whole grain


Directions

Quick-Pickled Onions

  1. Cut the quarter-onion into ½-inch slices.
  2. Bring the vinegar, bay leaf, peppercorns, salt, and chili flakes to a boil in a small sauce pan.
  3. Place the onions in a small glass or ceramic bowl and pour the liquid over the slices. Let the onions soak for 20 minutes.

Smoked Turkey Panini

  1. Preheat a sandwich press or grill.
  2. Divide the ingredients and layer the turkey, pickled onions, tomato and cheese on the bread.
  3. If using a grill, press the sandwich down with a small cast iron skillet. Cook the panini until the cheese melts, about 4 minutes.

Serve hot.
