Ingredients

  1. 2 cups spelt flour
  2. 3 Tbsp olive oil
  3. 3/4 tsp salt
  4. 2/3 cup warm water

Directions

  1. In a bowl, mix flour, oil and salt.
  2. Gradually add enough water until a dough is formed which leaves the bowl clean.
  3. Knead the dough on a firm surface for at least 2 minutes.
  4. Place dough back in the bowl and leave for at least 20 minutes.
  5. Cut dough into 8 equal pieces.
  6. On a floured surface roll each piece into a thin round flatbread.
  7. lightly oil a heavy pan on a medium heat. Add a flatbread to the pan and cook for 1 to 2 minutes until the surface bubbles.
  8. Turn over and repeat.
  9. Do the same for each flatbread.
