Ingredients

  1. 1 cup / 240 ml brewed coffee, preferably organic or:
    • 1-2 shots of espresso, preferably organic
  2. ½ cup / 120 ml organic, pastured or vegan milk (almond preferred)
  3. 3 Tbsp. / 46 g pumpkin puree
  4. 1 tsp. / 1¾ g pumpkin pie spice
  5. 1 tsp. / 4 g coconut or raw sugar, or 2-3 drops of liquid Stevia or monk fruit sweetener
  6. ½ tsp. / 2½ ml vanilla extract
  7. Sprinkle of ground cinnamon (optional)

Directions

  1. In a saucepan, mix together the milk and the pumpkin. Heat until hot but not boiling, stirring constantly to keep the milk from scalding.
  2. Remove from heat, stir in the vanilla, spices, and sweetener, and use a blender to process for 30 seconds until foamy. Alternately, use a milk frother to foam the milk in a cup.
  3. Pour the brewed coffee into a mug and add the milk mixture on top. Sprinkle with cinnamon and enjoy!
