Ingredients
- Puff Pastry Dough
- 1 cup / 360 g goat cheese, soft, preferably organic pastured
- 1 omega-3 or grass-fed egg
- 1 Tbsp. / 15 g butter or olive oil
- 1 cup / 70 g button mushrooms
- 1 cup / 80 g oyster or shiitake mushrooms
- 1 onion
- 1 cup / 30 g raw spinach
- Zest of 1 lemon, finely grated
- Juice of 1 lemon
- 4 cloves garlic, crushed
- Ground black pepper, to taste
Directions
- Preheat your oven to 375°F / 190°C.
- On a floured surface, roll out the pastry dough, and cut 12 circles of about 2×2 in / 5×5 cm each. Press the dough circles onto mini pie baking tins or the cups of a nonstick muffin tray. Place in the refrigerator to chill until ready to use.
- In a bowl, combine the cheese with the egg. Add pepper, and whisk together to blend well. Set aside.
- Melt the butter or heat a tablespoon of olive oil in a skillet over medium heat. Stir in the onions and lemon zest, and sauté until the onions turn translucent.
- Add the mushrooms and garlic; cover and cook until all liquid has evaporated, for about 10 minutes.
- Fold in the spinach and lemon juice; season with salt and pepper if desired. Return the cover and cook until the spinach is wilted, for about 5 minutes more. Drain any excess liquid. Combine this mushroom spinach mixture with the cheese batter mix.
- Take out your pie tart shells from the fridge refrigerator. Scoop portions of the mushroom mixture into the shells. Place the pie tins on a baking sheet over the center rack of the preheated oven. Bake for about 15 minutes. Set out on a cooling rack for 10 minutes before removing the tarts from the tins and serving.

I am completely confused. I think I need some help. I chose the menu you have provided due to time but there’s little there I would enjoy. Also this is a heck of a lot of food to consume per day. I am currently on two meal replacement shakes a day and can’t lose an ounce! So depressing

Hi, JeanneRoss. We are gradually adding size reduction functions to all of our recipes. We definitely do not intend to ignore you, and our newer recipes (other than holiday ones) are intentionally being made to be for much smaller numbers of servings.
As a rule of thumb, anything without cottage cheese, melted cheese, egg, or soy milk or tofu will freeze well.
no size reduction. I think your ignoring those of us that are single or alone. Lot of work to have to figure some of these are 12 (and when YOU do it is only in half) How do we know if this is freezable or not so it could be made ahead? Seems like a lot of your rec ARE large portions. 🙁

Hi, loudonna. We don’t work with calories in this program, but rather with meeting your nutritional needs through major food groups. At the end of each recipe you’ll see the exchanges per serving, which you can compare to the exchanges allotted to you at each meal and day (to view this, click on “Exchange mode” in the toolbar above any of your menus). The general nutritional values of the exchanges are as follows:
1 carb exchange = 15 grams of carbohydrates + up to 3 grams of protein
1 protein exchange = 7 grams of protein + up to 5 grams of fat
1 fat exchange = 5 grams of fat
1 fruit exchange = 15 grams of carbohydrates
1 vegetable exchange = 5 grams of carbohydrates + up to 2 grams of protein

I made these but relaced the pastry with a slice of wholegrain bread lightly buttered. Put the bread into individual dishes & bake at 180″ C for 10-15 mins till crusty. Add mixture & return to oven for a further 15 mins. Delicious

Just before adding the mushrooms to the pan, use the garlic to flavor the butter.

I have not been able to get quinoa flour so I used shop bought puff pastry. I had no tart tins so I just placed the sheet of pastry on a baking sheet and spread the mixture over it like a pizza. It is absolutely delicious!
