Ingredients
- 1 cup dried peas (organic)
- 6 cups water
- 1 tsp olive oil
- ½ onion
- 1 can no-added-salt tomatoes
- 3-4 cups low-sodium chicken or vegetable broth
- 1 cup organic carrots
- 1 cup organic chicken breast, cooked
Directions
- In a soup pot, cook peas for 1 hour in 3 cups of water, drain, and set aside.
- Heat olive oil in a saute pan, add onion, and cook until translucent.
- In a soup pot, add onions, peas, and remaining ingredients. Cook over low heat until done.
