    Ingredients

    1. 1 cup dried peas (organic)
    2. 6 cups water
    3. 1 tsp olive oil
    4. ½ onion
    5. 1 can no-added-salt tomatoes
    6. 3-4 cups low-sodium chicken or vegetable broth
    7. 1 cup organic carrots
    8. 1 cup organic chicken breast, cooked

    Directions

    1. In a soup pot, cook peas for 1 hour in 3 cups of water, drain, and set aside.
    2. Heat olive oil in a saute pan, add onion, and cook until translucent.
    3. In a soup pot, add onions, peas, and remaining ingredients. Cook over low heat until done.
