Ingredients

  1. 12 large prawns
  2. 1 Tbsp. / 9 gm wolfberry/goji berry
  3. 1 garlic clove, crushed
  4. ⅛ tsp. / ¼ gm Stevia powder
  5. 1 Tbsp. / 15 ml rice wine
  6. Salt to taste
  7. 4 Tbsp. / 60 ml water
  8. Julienned blanched bell pepper for garnish

Directions

  1. Clean the prawns well, slit the back, and devein.
  2. Combine all the ingredients in a bowl.
  3. Let the prawns sit in the combined mixture for at least 15 minutes.
  4. Heat water in a wok. Add the marinated prawns, cover, and steam for approximately 10 minutes.
  5. Transfer to a serving plate and serve hot with your favorite flavored rice (½ cup / 100 gm cooked = 1 carb serving).

  1. Hello Trim Down Club, Had my first meal with this recipe today! I had never cooked wild rice myself, I’ve only eaten it at restaurant but it was pretty good if I say so myself. Exchanged the vegetable for artichokes and that was interesting. Haven’t eaten too much of those. Prawns were good too. I couldn’t find everything I was shopping for, but my first time out the gate, it will get better. Along with being interested to see how my husbands reacts to it and the portions are soooooooooooooo much smaller than we’re use to. I really enjoyed the fact that I was eating a little healthier.
