Ingredients
Salad- 6 cups / 1½ L chopped romaine lettuce
- 2 cups / 460 ml organic strawberries, chopped
- 8 strips / 8 oz / 230 g organic uncured bacon (preferably pastured), cooked and crumbled
- ½ medium red onion, diced
- 1 cup / 5 oz / 150 g feta cheese (pastured), crumbled
- 1 tsp. / 5 ml garlic, minced
- 1 tsp. / 5 ml red onion, diced
- ¼ cup / 60 ml organic strawberries, chopped
- ⅓ cup / 80 ml whole evaporated cane juice or demerara sugar *or natural no-carbohydrate "brown sugar" spoonable sweetener
- ⅓ cup / 80 ml white vinegar
- ½ cup / 120 ml olive oil
- ¼ tsp. / 1 ml salt or substitute
- ¼ tsp. / 1 ml ground black pepper
- 1 Tbsp. / 14 ml poppyseeds
Directions
- In a large bowl toss together chopped lettuce, strawberries, bacon, and red onion.
- In a food processor or blender, add all dressing ingredients and pulse 1-2 minutes until smooth.
- Pour dressing over salad and top with crumbled feta cheese.
