Ingredients

  1. 2 sweet potatoes, cut into bit-sized cubes
  2. 1 medium onion, sliced thinly
  3. 1 cup / 100 g green beans cut to 2 inches / 5 cm long
  4. 1 bunch lettuce, torn
  5. 3 oz. / 90 g all-natural uncured turkey or organic vegan sausage, diced
  6. 1 cup / 240 ml plain organic vegan or Greek yogurt
  7. 1 Tbsp. / 8½ g chopped olives
  8. ½ cup / 66 g cucumber, chopped
  9. ½ cup / 60 g walnuts, coarsely chopped

Directions

  1. In a two-quart pan with a steamer, steam the sweet potatoes for approximately 15 minutes until tender.
  2. Remove from pan, and steam the green beans in untl tender, about 5 minutes.
  3. In a large bowl, combine the sweet potatoes with the green beans, onions, and turkey sausage.
  4. In a smaller bowl; combine the yogurt with cucumber and olives to make the salad dressing.
  5. Add the lettuce to the salad mixture just before serving.
  6. Pour some dressing, sprinkle the walnuts and serve.

  1. I love the fact that most of the ingredients are either organic or grass fed — very healthy — however, cooking food in a microwave is very unhealthy. It not only changes the molecular value of the food, it gives off radiation.

  2. Is the turkey in this recipe pre-cooked? Re: dressing- note; combine the yogurt with cucumber & olives to make the dressing – see just above comments + it states: one bunch of lettuce, torn.

  3. I really enjoyed this, but I did use a bit more sausage (cooked an organic chicken sausage and chopped it) than allowed if this is divided into 8 servings. I modified for two and cooked the onions lightly.
