Ingredients

  1. 1 sweet red bell pepper
  2. 2 plum tomatoes, sliced (these are also known as Italian or Roma tomatoes)
  3. 2 cloves fresh garlic, crushed
  4. 2 tsp. / 10 ml olive oil

Directions

  1. Preheat oven to 180°F / 80°C.
  2. Half and deseed pepper.
  3. Brush or mist halves with 1 teaspoon / 5 ml oil, and on baking sheet, inside down.
  4. Place in oven and roast for 20-25 minutes
  5. Turn over pepper halves, and spread crushed garlic on the insides.
  6. Place tomato slices over garlic, and drizzle the remaining olive oil.
  7. Continue roasting in oven for 20-25 minutes.

Serving size:½ pepper + 1 tomato
