Ingredients
- 1 sweet red bell pepper
- 2 plum tomatoes, sliced (these are also known as Italian or Roma tomatoes)
- 2 cloves fresh garlic, crushed
- 2 tsp. / 10 ml olive oil
Directions
- Preheat oven to 180°F / 80°C.
- Half and deseed pepper.
- Brush or mist halves with 1 teaspoon / 5 ml oil, and on baking sheet, inside down.
- Place in oven and roast for 20-25 minutes
- Turn over pepper halves, and spread crushed garlic on the insides.
- Place tomato slices over garlic, and drizzle the remaining olive oil.
- Continue roasting in oven for 20-25 minutes.
Serving size:½ pepper + 1 tomato
