Ingredients

  1. 2 cups / 480 ml low-sodium vegetable broth/stock + 1 Tbsp. / 10 g (or to taste) Thai seasoning blend to taste* or:
    • 16 oz. / 480 ml Thai Ginger broth (boxed, preferably MSG-free), prepared
  2. 1 onion
  3. 8 oz. / 226 g mushrooms
  4. 1 green or yellow sweet bell pepper
  5. 1 red sweet bell pepper
  6. 2 carrots
  7. 2 stalks celery, preferably with leaves
  8. 1 cup / 90 g broccoli
  9. 1 cup / 100 g cauliflower
  10. 1 sweet potato
  11. ¾ cup / 150 g yucca root or 1 white potato, preferably with skin and well-scrubbed
  12. 12 oz / 340 g lean pork cutlets, preferably organic pastured
  13. 2 Tbsp / 7 g fresh parsley, basil, and or cilantro/coriander leaves

  14. * Though many pre-made Thai seasoning blends are available—including low-sodium and MSG-free—you may wish to make your own.

    Homemade Thai Seasoning Blend

  15. ½-in / 1-cm cube of gingerroot, minced or ½ tsp. ground ginger
  16. ¼ cup shredded unsweetened coconut
  17. Zest from 4 limes (about 2 Tbsp. / 20 g)
  18. ½-1 tsp. / 1 g red chili flakes (or to taste) or ¼ tsp. / 0.8 g cayenne pepper (or to taste)
  19. ½ tsp. / 1 g ground coriander
  20. 1 clove fresh garlic, minced or ¼ tsp. / 0.8 g granulated garlic powder
  21. 1 tsp. / 2 g paprika
  22. 1 tsp. /3 turmeric
  23. ½ tsp. / 1 g ground black pepper
  24. ½ tsp. / 2 g ground fenugreek
  25. ½ tsp. / 1 g dry mustard
  26. Salt or substitute to taste (optional)

Directions

  1. Slice mushrooms and vegetables into bite-sized pieces, and cube pork cutlets.
  2. Brown pork in a little water, add vegetables and broth.
  3. Simmer for 20 to 30 minutes.
  4. Best served hot.

      “Tahini” is sesame paste – it has the consistency of salad dressing, and certainly can be used for that – but it is more likely to be found in the ethnic foods category of a supermarket.
      The cocoa powder that we recommend is pure cacao – yes, this Hershey’s product counts: https://www.hersheys.com/en_us/products/hersheys-natural-unsweetened-cocoa-8-oz-cans.html.
      The whipping cream is indeed the product in the dairy case – liquid, unwhipped, unsweetened.
      Nut oils are available in health-oriented stores like Whole Foods Market or Trader Joe’s, and may even be in some CostCo branches – you can choose if you want hazelnut, almond, Brazil nut, etc., whatever flavor you like.

      Mascarpone cheese is like a very soft, cream cream cheese, and higher in fat. You can sort of convert full-fat cream cheese to a mascarpone-like version by combining it with a little heavy whipping cream and coconut oil.
