Ingredients
- 2 cups / 480 ml low-sodium vegetable broth/stock + 1 Tbsp. / 10 g (or to taste) Thai seasoning blend to taste* or:
- 16 oz. / 480 ml Thai Ginger broth (boxed, preferably MSG-free), prepared
- 1 onion
- 8 oz. / 226 g mushrooms
- 1 green or yellow sweet bell pepper
- 1 red sweet bell pepper
- 2 carrots
- 2 stalks celery, preferably with leaves
- 1 cup / 90 g broccoli
- 1 cup / 100 g cauliflower
- 1 sweet potato
- ¾ cup / 150 g yucca root or 1 white potato, preferably with skin and well-scrubbed
- 12 oz / 340 g lean pork cutlets, preferably organic pastured
- 2 Tbsp / 7 g fresh parsley, basil, and or cilantro/coriander leaves
- ½-in / 1-cm cube of gingerroot, minced or ½ tsp. ground ginger
- ¼ cup shredded unsweetened coconut
- Zest from 4 limes (about 2 Tbsp. / 20 g)
- ½-1 tsp. / 1 g red chili flakes (or to taste) or ¼ tsp. / 0.8 g cayenne pepper (or to taste)
- ½ tsp. / 1 g ground coriander
- 1 clove fresh garlic, minced or ¼ tsp. / 0.8 g granulated garlic powder
- 1 tsp. / 2 g paprika
- 1 tsp. /3 turmeric
- ½ tsp. / 1 g ground black pepper
- ½ tsp. / 2 g ground fenugreek
- ½ tsp. / 1 g dry mustard

Directions
- Slice mushrooms and vegetables into bite-sized pieces, and cube pork cutlets.
- Brown pork in a little water, add vegetables and broth.
- Simmer for 20 to 30 minutes.

“Tahini” is sesame paste – it has the consistency of salad dressing, and certainly can be used for that – but it is more likely to be found in the ethnic foods category of a supermarket.

The whipping cream is indeed the product in the dairy case – liquid, unwhipped, unsweetened.
Nut oils are available in health-oriented stores like Whole Foods Market or Trader Joe’s, and may even be in some CostCo branches – you can choose if you want hazelnut, almond, Brazil nut, etc., whatever flavor you like.

Mascarpone cheese is like a very soft, cream cream cheese, and higher in fat. You can sort of convert full-fat cream cheese to a mascarpone-like version by combining it with a little heavy whipping cream and coconut oil.
