Ingredients
- ⅓ cup / 80 ml olive oil
- 1 clove garlic, minced
- 1 tsp. / 5 ml fresh lemon juice
- 1 Tbsp / 15 g fresh lemon zest
- Leaves from ½ bunch fresh basil (or 1 tsp. / 1½ g dried basil)
- Leaves from ½ bunch fresh parsley (or 1 tsp. / 1½ g dried parsley)
- ½ tsp. / 3 g salt or substitute
- 1 tsp. / 2½ g ground black pepper
- 2 lb / 900 g tilapia fillets, preferably wild or omega-3-fortified
Directions
- In a bowl, combine ¼ cup / 60 ml of the olive oil with the garlic, lemon juice, basil, parsley, salt, and pepper; pour into a plastic bag that can be sealed.
- Slice the tilapia fillets into a total of 8 pieces, and place in the bag; toss to coat evenly with the marinade.
- Seal the bag and place it in the refrigerator to chill for at least an hour.
- Preheat your grill to no more than 300°F / 150°C (to avoid unhealthy blackening). Brush the remaining olive oil on the grate.
- Remove the tilapia from the marinade bag place on the grill; strain the solids (garlic, lemon zest, and basil), and place evenly on the fillets.
- Cook for 4-5 minutes each side, or until easily flaked with a fork.
- You can serve the grilled tilapia with steamed brown rice or similar grains, grilled potatoes (½ cup / 100-120 g cooked = 1 carb serving) or any of your favorite side dishes.

Hi, Lynndallcroft. Tilapia is somewhat controversial in Queensland, but perhaps you can find it imported. You can substitute with gold band or another mild snapper or yellow fin tuna.
