Ingredients
- 1 lb / 450 g ground extra-lean pastured turkey
- 1 sweet bell pepper, finely chopped
- 1 cup / 45 g whole grain cereal crumbs or 2 cups / 200 g mushrooms*, chopped
- 2 tsp. / 1½ g dry basil leaves
- 1 Tbsp / 3 g dried oregano leaves
- 1 oz / 30 g organic grass-fed cheese, grated
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tsp. / 10 ml avocado oil
- ½ cup / 120 g tomato sauce
- ½ cup / 120 g organic soy or Greek yogurt
- ½ cup Homemade Ketchup
Directions
- Preheat oven to 375°F / 190°C. Lightly coat a loaf pan with nonstick cooking spray.
- In a large bowl, combine all the ingredients and stir to mix well. You may have to do this for approximately 10-15 minutes to obtain a well-coagulated texture.
- Pack the mixture into the prepared loaf pan, and top with homemade ketchup.
- Place the pan in the preheated oven; bake uncovered for 45 minutes.
- Serve in slices with your favorite steamed vegetables.

Invest in a meat grinder and grind your own meat, I have noticed that ground meat is more expensive, plus when you buy it at the store you don’t really know what parts they are grinding. Harbor Freight sells an electric meat grinder with stainless steel blades/ plus it has the stuffing tubes to make sausages, for $50.00 plus shipping, you can have it shipped to store or your home. I have bought from them for years and have always had good service from their products . You can make sausage from chicken or other meats that will be a lot better for you.
Hi, NBock. Grass-fed cheese is made from milk that comes from cows fed grass or allowed to graze naturally. This improves the fat composition of the cheese greatly. Organic vegan cheese is generally made from natural oils and gums, or from soaked and ground nuts; when you purchase it do try to avoid those that contain palm oil.

Ok..made this today…delicious…when I finely diced the veggies, it was a lot so I sautéed them with the oil for 6-7 mins..glad I did! It took much longer to bake..I used a thermometer and it took almost double the time…I also used poultry seasoning as I did not have the other..there was quite a bit of juice so I turned it over in the pan on a rack and drained it for 10 mins…the rack made nice lines for cutting too! We are going to slice it thin for a cold sandwich tomorrow ! Made a large loaf..it will be three meals for us two! Enjoy!
