Ingredients

  • Zucchini, 2 small (236 g)
  • Olive Oil, 3 tablespoon (45 g)
  • Romaine Lettuce, 2 Cup (100 g)
  • Arugula, 1 cup (28 g)
  • Walnuts, 1 cup shelled (50 halves) (100 g)
  • Mayonnaise, 1/2 cup (108 g)
  • Spring Onions (Scallions), 0.3 cup (29 g)
  • Lemon Juice, 2 tablespoons (30 g)
  • Garlic, 1 garlic clove (4 g)
  • Chili Powder, 1 pinch (1 g)
  • Table salt, 1/2 teaspoon (3 g)

Instructions

  1. Trim and cut the salad. Cut the zucchini in slices or pieces. (1/2 inch approx.). Chop the garlic.
  2. In a bowl prepare the dressing combining mayonnaise, one tbsp of olive oil, lemon juice, garlic and salt.
  3. In a pan, warm the remaining olive oil and cook the zucchini, stirring until golden-brown (3 minutes approx.)
  4. Add the zucchini and the walnuts to the dressing bowl. You can optionally roast the walnuts in the same pan where you cooked the zucchini.
  5. Serve with some chili powder.
