Ingredients
- Zucchini/courgette, 2 (386 g)
- Bacon, 2 slices (52 g)
- Cheddar Cheese, 2 cups (224 g)
- Raw Egg, 3 (129 g)
- Heavy Cream, ¼ cup (58 g)
- Onion, Fresh, 2 oz (56 g)
- Table salt, ⅓ tsp (1½ g)
- Black Pepper, ⅓ tsp (1 g)
- Butter, Unsalted, 2 Tbsp (28 g)
Instructions
- Preheat the oven to 350°F/180°C.
- Steam the zucchini/courgette for 10 minutes, then place them in a greased baking pan. Dot with pieces of butter.
- Cut the bacon and the onion into small pieces.
- In a bowl, mix eggs, cream and bacon, then add onions, salt, pepper and half of the cheese. Mix well.
- Add the egg mixture to the baking pan with the other half of the cheese on top.
- Bake for 30 minutes or until slightly browned.

Hi, Kya1. Uncured ham and smoked salmon would provide similar flavors. You can also add pine nuts, as was suggested as a garnish here.
I think step 3 is out of place. Shouldn’t the zucchini be drained BEFORE placing it into the baking pan?
