Ingredients

  • Zucchini/courgette, 2 (386 g)
  • Bacon, 2 slices (52 g)
  • Cheddar Cheese, 2 cups (224 g)
  • Raw Egg, 3 (129 g)
  • Heavy Cream, ¼ cup (58 g)
  • Onion, Fresh, 2 oz (56 g)
  • Table salt, ⅓ tsp (1½ g)
  • Black Pepper, ⅓ tsp (1 g)
  • Butter, Unsalted, 2 Tbsp (28 g)

Instructions

  1. Preheat the oven to 350°F/180°C.
  2. Steam the zucchini/courgette for 10 minutes, then place them in a greased baking pan. Dot with pieces of butter.
  3. Cut the bacon and the onion into small pieces.
  4. In a bowl, mix eggs, cream and bacon, then add onions, salt, pepper and half of the cheese. Mix well.
  5. Add the egg mixture to the baking pan with the other half of the cheese on top.
  6. Bake for 30 minutes or until slightly browned.
